“I love fresh top-quality sushi. Rice preparations and fresh ingredients are key. We want the product to be the star and not overwhelm the dish with too much embellishment” – Executive Chef Gene Briggs
Our concept
While it may be a clichéd term in today’s culinary world, Farm to Table is still an apt description when a local restaurant is sourcing fresh products from local farmers and using them in a creative manner to prepare delicious meals. To the extent possible, this is the goal at Eight Sushi and Asian Kitchen. Fresh ingredients are paramount in the preparation of Asian cuisine. Executive Chef Gene Briggs and Chef de Cuisine Andrew Angotti have developed the menu for Eight around these principles. Asian seasoning and techniques will be used to provide a fresh, authentic Asian dining experience for our guests. “Our menu will be sushi heavy. The appetizers, small plates and entrees will be our focus for local products,” says Chef Briggs.
Who we are
Eight Sushi & Asian Kitchen is a collaboration between owners Lisa Bennett, Robert Ortiz and Charlotte restaurateur Alex Myrick. Eight provides additional dining options to the patrons of the NC Music factory. We wanted to remain true to the soul of this structure and create authenticity in our design and cuisine.
Our restaurant
The interior features simple table and bar seating in order toplace focus on the exquisite food. The interior design embraces the industrial elements of the 120-year-old mill buildings that make up the Music Factory. Local artists introduce a modern twist with the use of graffiti style street art as well as metal and wood elements. Charlotte artist John Hairston’s wall murals are the main attractions in the dining room and behind the bar.
Eight is moderately priced, approachable cuisine that will appeal to conservative diners as well as the adventurous.
